The world is just too big to only try one type of cooking!

NILAGANG MANOK (Filipino chicken soup)

This is such a comforting Filipino dish that is perfect for a gloomy or cold day or any day that you would like something comforting to eat that sits well in your stomach. This dish is originally made with beef and beef bones (a.k.a Nilagang Baka) but I had an abundance of chicken drums to use. Sometimes this soup will have bananas in it or green beans, I used whatever I had in my fridge. Do be sure to use bone in meat and to serve with fresh steamed rice.

Recipe:

1 lb of bone in chicken (thighs, drums or wings preferred)

1/2 of a cabbage head, quartered

1 medium onion, quartered

3 golden potatoes, cut into chunks

2 tblsp of chicken buillon

salt and pepper to taste

3 tblsp of fish sauce and more for serving


Begin by putting 6 cups of water to boil, add the salt, pepper, onion, chicken and buillon and bring to boil, you can also use peppercorns if you have it available ( I did not)

After about 15 minutes of boiling remove the scum that floats to the top with a spoon, then add the potatoes to the pot.

Once the potatoes are fork tender (about another 10-15 minutes) add the cabbage and allow the cabbage to cook until soft.

Taste the broth and add fish sauce to desired saltiness.

Serve in a bowl with a plate of steamed rice on the side and enjoy!!!

Don’t forget to carefully pile a bit of the vegetables, rice, chicken and broth on a spoon for the perfect bite!!!
